Pumpkin Bread Mix

The signature product in the Little Bay line. We have been making this pumpkin bread for over 20 years and serving it to family and friends who do not have to eat gluten free.

Add your own oil, eggs, water and canned pumpkin to make this moist and flavorful bread.

Ingredients:
Granulated sugar, rice flour, potato starch flour, tapioca flour, potato flour, salt, baking soda, nutmeg, cinnamon, clove

Suggestions:
Add chopped nuts or raisins before pouring into pan. Can also be made into muffins.

Waffle & Donut Hole Mix

Light and airy with a crispy outside, these waffles are perfect for a Sunday brunch.

Add rice milk, eggs and shortening to make 5 round 7" waffles per batch.

Don't own a waffle iron… Try making donut holes.

Add rice milk, an egg, oil, sugar and nutmeg. Drop into hot oil to make 18 golden brown nuggets.

Ingredients:
Rice flour, potato starch flour, tapioca flour, potato flour, baking powder, baking soda, salt.

Suggestions:
Waffles freeze well and can be reheated in a toaster oven for breakfast or on the go. Can add blueberries to the batter before cooking.

Roll donuts in powdered sugar or cinnamon for a delicious treat.

Sponge Cake Mix

Moist and flavorful our sponge cake is a big hit with berries and cream or ice cream and chocolate sauce.

Add water and eggs to make a 10" sponge cake

Ingredients:
Granulated sugar, rice flour, potato starch flour, tapioca flour, potato flour, baking powder, salt, dry vanilla.

Suggestions:
Add lemon extract and lemon peel to make a delicious variation to serve with ice cream. Add 1 Tbs gluten free nonpareils to the batter before baking to make a cake filled with bursts of color for your next birthday party. Can be glazed or frosted.

Gingerbread Cookie Mix

Soft and chewy or thin and crispy, these gingerbread cookies are perfect for the holidays or any occasion.

Add water, molasses and casein free margarine or ghee to make 2 dozen gingerbread cookies (corn syrup or honey may be substituted for molasses and margarine or butter may be substituted for ghee)

Ingredients:
Rice flour, brown sugar, tapioca flour, potato starch, potato flour, cinnamon, xanthan gum, baking soda, ginger.

Suggestions:
Sprinkle with colored sugar before baking or frost and decorate after baking.

Corn Bread Mix

Add rice milk, eggs and oil to make an 8 x 8 corn bread or 12 - 15 muffins

Ingredients:
Corn meal, rice flour, potato starch flour, tapioca flour, baking powder, potato flour, salt, xanthan gum.

ALLERGEN ALERT: May contain traces of soy

Suggestions:
For sweet corn muffins add 1/2 cup sugar (or alternative).

Try adding blueberries and lemon peel or dried cranberries and walnuts before baking.

Gluten Free Cooking From Scratch DVD
